Winemaking:
Destemming without crushing, fermentation in stainless steel tank at 25ºC and rack and return daily. Malolactic fermentation in new French oak barrels, where the wine remained 18 months. Aged for 2 months in the bottle before being released onto the market.

Tasting Notes:
Complex aromas of blackberry jam, plumb, liquorice, dark chocolate and pink pepper. Smooth on mouth, well balanced with a great freshness and full body tannins. Long potential of ageing.
Store and Serve Advices:
Storage Lying down at a temperature of 15°C. Serve at a temperature of 16°C to 18ºC.
Food Pairing:
Goes well with Sheep’s cheeses with some curing or cod with spices.
