Tira o Véu is a white wine from an 85-year old vine from Serra de São Mamede with a mixture of traditional grape varieties. It was fermented in Amphora's with 30% skin contact, and in December of the same year the films were removed and returned to the Amphora to stage and round the tannins. During the spring of the following year he created a Flower Veil on the surface, a phenomenon that rarely happens, and that is typical of Jerez wines. It was in contact with the Veil until the bottling date which, together with the skin contact, gives it a very particular flavour and aroma.
