Fermented without stems under temperature control, frequent delestage, followed by extended skin maceration to enhance varietal fruit characters, and to provide tannin structure and balance. Aged for 8 months in French oak barrels.
Dark berry and plum fruits with subtle notes of toasty oak. Spicey, earthy, complex. Elegant palate showing layers of velvety fruit supported by a firm tannic structure. Extremely well balanced with nicely integrated oak. Classic Incognito, approachable now, but has the balance and structure for long term ageing.
Store and Serve Advices:
It should be served at a temperature of 16ºC to 18ºC.
To be dished up with gamey meats as well as other red meat dishes.
