The grapes were manually harvested for small boxes of 20 kg. The composition of the lot varies with the yields of each variety in the vineyard. After total destemming the grapes go to a small stainless mill, with temperature control, where they macerate 24 hours in the cold before the beginning of the fermentation. The fermentation is slow, under controlled temperature, with gentle surpluses. This wine was made only in stainless steel, to preserve all the natural aromas and flavors of the grapes that give it origin.
